What full deployment actually does to a venue's P&L

UK hospitality is brutal right now.

We're not selling magic — we're showing the arithmetic on a median independent when VenueCore is used end to end, not as a replacement till. Every figure on this page is a 2024 or 2025 actual from BBPA, Lumina Intelligence, CGA × AlixPartners or UKHospitality. Tap any tag to read the source.

1 · The climate

What the market actually looks like in 2025.

Five published facts that frame every conversation we have with an operator. None of them are ours.

£99.4bn

UK eating-out market value, 2024 forecast — +2.8% YoY, ahead of inflation.

£24.1bn

UK on-trade hospitality market value, 2025 — the addressable spend across independent restaurants, bars and small groups.

+3.2% LFL

Managed hospitality groups, Q4 2024 — highest reading in 7+ months.

Indies grew net sites

Independents were the only segment growing site count in 2024; managed groups consolidated. Q4 2024 closures still surged.

~4 closures / day

Q1 2024 closure rate — half the 8/day seen in 2023, but pressure remained on margin.

2 · The median operator

Where independents and small groups actually land.

Per-site weekly turnover bands published by BBPA and Lumina, translated into the archetypes VenueCore is built for — independents and small multi-site groups (2–10 sites) that choose their own stack.

ArchetypePer site / weekPer site / yearTypical group
Food-led independent

Single-site bistro / neighbourhood restaurant, 40–80 covers, table service.

Bars and music venues — 55–65% of weekly take falls on Fri/Sat.

Bands are mid-range publicly reported figures, not VenueCore estimates. Individual sites vary with location, trading hours and mix.

3 · Where the money leaks

Margin, labour, card fees, shrinkage.

The four lines that decide whether a median independent finishes the month in the black. Each band is a sourced UK actual, not a VenueCore assumption.

Gross margin
62–68%

Mixed wet/food independents (BBPA archetypes £8k–£15k/wk).

Labour as % of sales
32–36%

Up from ~28% pre-2022 — NLW + employer NI rises.

EBITDA margin
8–12%

Healthy small-group indies. Single-site under-£8k/wk often <5%.

Card / PDQ effective rate
1.8–2.4%

Legacy SME terminal contracts. BRC's 2024 Payments Survey reports card-scheme/processor fees rose 25%+ YoY. VenueCore in-person: 1.69% + 15p.

Stock loss / shrinkage
2–4% of net revenue

Well-controlled UK hospitality sites, per Venners (UK's largest licensed-trade stocktaker). Uncontrolled stock can run materially higher.

4 · Run it on your own venue

Pick your archetype — the calculator snaps to the sourced band.

Each preset uses the mid-point of the published per-site turnover band above, with shrinkage and PDQ defaults from BBPA / CGA. Adjust freely — the arithmetic is yours, not ours.

the cost of doing nothing

What your venue is losing every month without VenueCore.

Skim, voids, and overpriced card terminals quietly bleed UK independents. Move the sliders to match your venue — the right column is real money you're walking past.

Methodology

Nothing fabricated.

  • Source-first. Every band, percentage and headline on this page links back to a primary industry source published in 2024 or 2025.
  • Indie & small-group focus. The headline grid covers independent restaurants, bars and small multi-site groups (2–10 sites) — the operators free to choose their own stack. Formats locked into a single supplier are out of scope.
  • Per-site, ex-VAT. All weekly and annual figures are per trading site, net of VAT.
  • No VenueCore-only data. We don't quote our own customer numbers here — only third-party published research, so you can verify it yourself.
Disclaimers

Illustrative, not a forecast. Figures on this page are sourced UK industry benchmarks and the calculator runs basic arithmetic on inputs you provide. Nothing here is a guarantee, forecast, or promise of revenue, cost saving, profit, or business outcome for any specific venue. Individual results depend on trading hours, location, mix, staffing, suppliers, local market conditions and how the software is configured and used.

Third-party sources. Bands and percentages are reproduced from publicly available reports by BBPA, Lumina Intelligence, CGA × AlixPartners, UKHospitality, BRC and Venners (2024–25). VenueCore is not affiliated with, endorsed by, or sponsored by these organisations. Source links are provided so you can verify every figure at the original publisher.

"Full deployment" arithmetic. References to outcomes from end-to-end use of VenueCore assume the product is configured, operated and acted on by trained staff. The platform surfaces information and recommendations; operational decisions — pricing, staffing, stock, supplier and cash-handling actions — remain the responsibility of the venue operator. AI features are advisory only and may be incorrect.

No advice. This page is marketing content. It is not financial, accounting, tax, legal or investment advice. Operators should take independent professional advice before making decisions based on the figures shown here.

Currency, VAT & rounding. All values are GBP, per-site and ex-VAT unless explicitly labelled otherwise. Annualised figures use a 52-week year and may round to the nearest pound.

Calculator inputs. The ROI calculator processes the numbers you enter in your browser. When you request a PDF or email copy, your inputs and email address are stored on VenueCore infrastructure so the report can be generated and delivered. See our data-rights notice for details.
